PROGRAMME

THE WHOLE HAMACHI

We begin with a whole Ikejime Hamachi.

Matías will explain how to recognize the quality of the fish, introduce the Ikejime method, and demonstrate step by step how the whole fish is professionally prepared, filleted, and portioned for different preparations.

Participants will also learn which parts of the fish are best suited to different cooking techniques.

IKEJIME HAMACHI

Rocoto | Sweet Potato | Japanese Coriander | Amalfi Lemon

Together, we will prepare a dish that is also served to our guests at 136 Berlin.

From preparing the raw Hamachi and our signature Leche de Tigre to creating the different creams, sauces, and components, the dish will come together step by step.

The focus is not simply on following a recipe, but on understanding how we work at 136 with acidity, heat, sweetness, textures, and temperatures to create a balanced dish.

CHARCOAL-GRILLED HAMACHI

We then discover a completely different side of the same ingredient.

The Hamachi is cooked over charcoal, accompanied by a sauce, creams, and additional components that we prepare together.

Matías will demonstrate how fire and charcoal create deep roasted and smoky flavours while keeping the fish beautifully juicy inside

FROM COOKING TO PLATING

Once all the components are ready, we move on to the art of fine-dining presentation.

Matías will first plate the dish and explain the idea and structure behind the presentation. Participants will then create and plate their own dishes using the components prepared during the class.

Afterwards, it is time to sit down and enjoy what you have created.

A SWEET FINALE

After the cooking experience, it is time to relax.

The dessert will be prepared, plated, and personally served by Chef Matías Díaz, offering a sweet and elegant conclusion to the 136 Hamachi Masterclass.
